My last assignment last week end in Sicily was not only a pleasure because of the welcoming people and the nice climate. I had the honor of following Sicilian Chef David De Gaetano preparing some of his recipes. It has been for me a delight for the senses. We walked together in the Sicilian nature gathering herbs and natural ingredients that he then would use to prepare his very delicious dishes. David though me many thing about his culinary philolophy. He lives in Brussels and when he goes back to Noto Antica, his journey brings him back to nature, with all the senses. If you love fantastic Italian food, prepared with the seasonal herbs, fruits and vegetables you have to pay a visit to Borgo Averia, where David works several months a year. In his dishes every single taste and smell is so distinct, I was really astonished and had to control myself as after photographing every dish… it was offered to me to eat! I just love this job!
